I can create a contents and insert it into the document, proving that I am using paragraph styles. But when I try to view a contents in the side bar, it says 'Use paragraph styles in your document to populate the table of contents' and there is no possibility to edit it.
When you generate a table of contents, it is based on used paragraph styles. When you click on that table of contents, Pages displays a sidebar where you select the specific paragraph styles used in the document so that the table of contents acquires structure.
Unlike MS Word, Pages has no table of contents editing capability.

The sidebar on the right shows the paragraph styles that have been included in the table of contents. It does not show the table of contents. It is not a thumbnail. Navigate to the TOC and click on it to see the paragraph styles that are included.
I used only Heading style for every TOC entry.
What do you see that is different?

Unfortunately in that side bar it suggests I need to use paragraph styles when I have (as it has enabled me to insert a contents, just not view a side bar contents)
I can see the exact same and I can insert a table of contents successfully. The problem I'm having is viewing the contents in the left side bar - it just says this, despite me using paragraph styles.
