First you create a new email address, then you follow this support article to change your Apple ID to that email address. Nothing will be lost as long as you use this method.
Note that an "Apple ID" is simply an email address. It is not the same as an "Apple Account" which is the entire user package with iCloud etc. If it was simply your email account that was used as the identifier for your account that was "hacked" (people misuse that term a lot, thank-you Hollywood) then do as the other post instructs. Your ex probably didn't "hack" your account, your ex simply saw you enter your password or found where you wrote it down. That isn't hacking. If you mean your entire account was compromised:

You can create a new account, but transferring things to it highly depends upon where you keep them, how you do backups, etc. Some things cannot be transferred at all. So in the end it depends upon if it was your email that was hacked or your entire account. That part is not clear from you.
