I'm finding it immensely frustrating not to be able to change the default naming of photos on my iPhone- is anyone aware of a way to do this? The standard naming of Image plus number seems completely pointless and unhelpful. All other phones seem to offer this, and it seems an obvious function. I'm on the point of getting a new phone, and this is enough to make me abandon iPhones for an Android!

Why would you say that? This is a community of users. We don't know you or care what sort of phone you use.
File names in Photos aren't really used for anything. In fact, what you see as a filename isn't even real. For instance, this picture
of my wife's father in the British India Army during WWII has the filename of
A48A871B-10B9-4F11-850C-5A97C0A3CC44.jpeg
and all actual filenames of all the pictures in Photos look like that. They have a "name" like DSC_01234, or whatever, just to please people. With people using different cameras, names so simple are likely duplicated.
The capture date for each picture is shown in the info window. You can include extra information in the Caption.
There are a number of user contributed AppleScripts to change the Title of the file to the capture date if several forms. Upon export out of the library the Title field can be used as the new file name.

I compile the scripts and save them as an application. Then select the photos I want to change the Title and run the app.

Unfortunately, the Title doesn't show for an iPhone, and it can't be used for sorting on an iPhone. You would need a Mac to set the Titles, but once they were set, Titles can be used for searches.
