I have plan which doesn’t use esim’s, I would like to buy AW cellular, I’ve got normalne SIM Card, can I connect them normally without eSIM and use cellular with 100%?

The question is less what kind of SIM card you use. The question is more whether the carrier you use supports Apple Watch. Not all carriers support Apple Watch. So, if you buy an Cellular Apple Watch and your carrier doesn't support Apple Watch, you can still use the watch with a paired iPhone, but you won't be able to set up cellular service on the watch. Contact your carrier to see if they support Apple Watch.

The carrier you mentioned (normalne, which I never heard of) does not appear here. So apparently you’re out of luck.

Did you purchase your iPhone in your home country? If so, presumably it has a SIM card slot. If your iPhone has a SIM card slot, eSIM is certainly not required.
Update: Oh maybe “AW cellular” in your post really means “Apple Watch cellular”, and not the name of a particular cellular carrier brand.
Apple Watch cellular can work whether the paired iPhone uses a SIM card or eSIM.
