How can I sync my iPhone 8 with my Mac mini without losing any data?

when i connect my iphone 8 to mac mini. it asking me two option. "start as new phone" or "restore old backup" . but i dont want to delete my old date in my current use iphone. i just want to syn with my mac mini and backup. what shall i do ?
