Unsupported Series 3 Watch keeps asking for software update (when there isn't one!)

Apple Pay suddenly stopped working on my Apple Watch Series 3 (now "obsolete"). I Googled the problem and someone said I should unpair and pair the watch to my iPhone. All went well....except I now cannot sync Apple Wallet because I receive a message saying that Watch has to be updated to the latest WatchOS before I can connect to the Cloud and sync my Wallet. The problem is that there are no further updates to be had!


I don't want to upgrade the watch (which works just fine). But I would like to use Wallet on the watch. Grateful for any suggestions. Thank you

The upshot of all this is that I cannot log the watch into iCloud (which requires a later ver than 8.8.1 and which is not available to the 3 Series. This means that various app (like Voice Memo) will not sync with my phone. When trying to add Wallet to the watch I receive the message "Apple ID Required. To set up Apple Pay, sign in with your Apple ID." I'd love to do that, except I cannot!
