Because it's no longer available for sale from Apple. If you want a new 15 Pro or Pro Max, you're going to have to call an Apple Store or other authorized reseller to see if they have any remaining stock.

As Kurt said, the iPhone 15 Pro models have been discontinued. They've been replaced by the iPhone 16 Pro models.
