Settings -> General -> Software Update -> Beta Updates. Toggle to "off".

You need to unenroll from the Beta entirely and remove the Beta profile from Settings.

Turning it off, does not remove the Beta option from the Software Update screen, it merely stops beta updates from showing up when they are available.
Yes, you are correct, the profiles were used with 16.3 and earlier betas.
Still, the OP will continue to see the Beta option even after turning it off. Or at least I continue to see the switch there even though I haven't used a beta con my iPhone ever and its set to off.

That is correct. I don't know of any way to remove that option for beta updates from Software Update. From what I can tell, it's a permanent thing.
