Downgradind the Watch OS from 10.1.1 to watch OS 8 or 9

Sorry, downgrading watchOS is not possible, no matter who you take it to. So unless you decide to get a newer iPhone, that watch will be useless to you.

As the thought of doing it always made me want to go eat chocolate (or marzipan) and forget computers existed, this is not a great problem for me. I know many would disagree.

For what it's worth, the only issue I've heard much about with Sequoia is an incompatibility with some third-party security software. And much of that is unnecessary anyway.

Sort of. I tried to downgrade from the Sequoia beta, and I found that the ONLY way to do it is with a second Mac with Apple Configurator 2 installed, completely erasing the Mac with Sequoia, then installing an earlier version using Configurator. And all data on the target machine not synced to iCloud will be lost.
