Watch 8 not measuring stairs climbed

I have an Apple watch series 8 I am also a delivery driver. Monday & Tuesdays are my worst days as I have lots of customers who live in flats (appartments) with no lifts (elevators) many live on the 3rd, 4th and even 5th floors. Despite walking all those stairs my Apple watch claims Ive either walked no stairs or 2-3 stairs (including inside my house) for the day. For years I was previously a FitBit user they were able to count flights of stairs (i dont know how accurately) but they seemed to do a far better job than my Watch 8.

Have I missed something in the settings?

Taking off the watch and testing the count of flight of stairs with the iPhone is only to find out, if 13 or 14 steps in a row count as 1 flight of stairs climbed on the iPhone.

If your try the same test with your watch, you should see the counted flight of stairs in the Health App -> Flight of Stairs -> scroll down to the bottom, select -> show all data, select the date, and you should see which device registered your stairs climbed.

My totals today were 8, but if you wear the watch and the iPhone, only one device will be counted and added to the daily result. When the watch was charging, the iPhone was the data source.
