If your carrier in Germany, supports eSIM, it likely will, but you should check with them. The bigger issue you may find is that iPhone does NOT come with International Warranty. If you buy a phone in the US and you need warranty service, you’ll have to bring the phone physically back to the US. You should ALWAYS buy your phone in the country you live and will use it.

I assume that you are aware that the phone may not be covered under the AppleCare warranty in Germany. You would have to ask an Apple Service shop in Germany whether they are able to offer warranty service.
