I don't know if this is a minor issue or what is going on, but once my Mac gets fully charged the Plug icon won't appear any more even if the description says it's using the power adapter for energy and I'm kind of scared it could still be sending power to the battery effecting it in the long run.

There is no risk, Apple just changed the icon. Personally, I use iStat Menus where I can customize the battery icon (including restoring the plug symbol, and colors to differentiate between charging, fully charged, and charging paused (and draining when not plugged in).

Charging icon won't reflect when battery is using Power Adapter
