I have upgraded to macOS Sequoia and tables will not centre text - both new and old Notes
Instead of centring, the text left aligns
As a heavier user of Notes, this is quite a frustrating issue
Anybody experiencing the same problem and any tips to fix?

Update: Looks like this has been resolved in software update 15.0.1
If the Text is in a Numbered List or Bulleted list it won't. Just tested it on mine

Try Format>Text and see the options
I can confirm that this is a new bug in Sequoia. I don't see any workaround.
I concur; filing a bug report is essential.

I doubt that. This is a pattern that gets repeated every time. The macOS Sequoia 15.0.1 release notes say:
This update provides important bug fixes for your Mac, including:
* Messages may unexpectedly quit when replying to a message with a shared Apple Watch face.

If the problem you are experiencing isn't on this list, then it isn't fixed. I realize that it says "including", but that should be discounted. How many people did you see complaining about replying to a message with shared Apple Watch face? Apple has their own criteria for deciding which bugs to fix.
You are certainly welcome to install each and every update. I just recommend against getting your hopes up. Yeah, sure, anything is always possible. But if you expect the extraordinarily unlikely, you are setting yourself up for disappointment, with 15.0.1, 15.0.2, 15.1, 15.1.2, 15.1.2, etc. etc.
Then only thing you can really count on is that version 16.0 will have an all new set of bugs to enrage people. It's only 9 months away!

Left, right and centre seem to work fine outside of tables

FWIW, etresoft was addressing AlWeir, and agrees with you, as do I. He suggested you file a bug report, as do I.
It doesn't work for me in tables
I wasn't using Tables, since neglected to mention it., but just did a quick test and I highlighted it and it centered. Hope that helped.
Maybe on your Notes but not on mine. I included three screen shot to show you. Sorry for the first one it didn't showup that well.

Thanks but my issue is centring the text within the table, albeit I also cannot centre a table aswell

Of the four options, only alignment options, only Align Left works (both via clicking on the options, and via the Command shortcut)
