You can update an iMac (Retina 5K, 27-inch, 2017) to Ventura. You cannot update it to Sonoma or Sequoia.
The App Store hides old versions of macOS by default – but there is a Support article with a link that will get you to the App Store page for Ventura.

What exactly happens when you try to update? Is Software Update not reporting anything, or is it failing when you try whatever update is presented there and if so what happens, including error messages if any?
When I try to update, the “update software” does not respond. I just get a spinning wheel. The file will not download from the app store. I have tried various restarts, soft boots, etc. and nothing works. I have plenty of storage space on my hard drive so that is not the issue. I ran the utility first aid and nothing showed up.
