My wife & I share the same apple account, we have an iPhone each & I have a watch. My wife has just purchased a watch but we realise it shares the same personal info for Health etc.
What is the simplest way to set up my wife with a new ID & retain sharing as much info as possible on her phone ?

On her iPhone, disconnect the Apple Account (Apple ID) (go to Settings > [your name], the Sign Out button is at the notion of the page). You'll be prompted to keep a copy of the data. I'd suggest only keeping Contacts and Keychain.
Then, create her Apple Account and set up Family Sharing. The latter will allow you to share purchases and subscriptions.
At this point, share the other data you wish to share:
