Why can’t I view my fitness info (FITNESS app)from my Apple Watch on my iPad like I can on my iPhone

The Fitness app on your iPhone is paired to your Apple Watch but your iPad is not (and cannot be). If you want to view workout details on your iPad, make sure that your iPhone is set to save details to the Health app and that it's set to sync via iCloud, then look in the Health app on your iPad.
