She can tell me things I’ve done on my phone but won’t admit she screen mirrors my phone I even have screenshots in my phone I didn’t take and etc. she seems to be secretive about her home app and activity with her “control other devices” . I run down the security checklist every time but she still manages somehow

If she lives with you and has a Mac, she could use iPhone Mirroring to access your iPhone, but that would require that your iPhone be locked so that would be pretty obvious. She could not be using it to watch what you're actually doing. It would be more likely that she has your Apple ID and password and is able to connect to your iCloud account which would enable her to see your photos, messages, documents saved to iCloud, etc. Change the password to your Apple Account and see if that locks her out. If she had put an MDM on your iPhone, which would require that she had physical access to your phone and its passcode, that still wouldn't allow her to view it unless that MDM would allow her to use AirPlay to send your screen to another device which again would be pretty obvious.
