selecting text in a photo?

Occasionally, in the lower right corner of a photo with text in it, there is a circle with a little box icon, with corners and lines inside, like in this attached image:

What’s it called, and how can I use it?

I couldn’t find an explanation anywhere I looked.

It appears to select text in a photo, but what else can I do with it after that?

It looks like you've figured out what Live Text does. It's pretty cool-- you can select and copy the text in whole documents, or read signs in the background.
