How do I update the mobile number the verification text is sent to update my card in Apple Pay? I’ve changed all contact details on iPhone and iPad and it still wants to use my old work phone number rather than my personal mobile.

That number is what your bank has on file as your primary contact number. Apple doesn’t verify you, your device or and personal information. Your bank is verifying you and thus using their information on file.
