How do I get a full list of all my Apple Books? I’d like it to be in spreadsheet. But I’d take a pdf or anything. I’m just trying to compile all the books I’ve read. I have read old threads about this and non of the advice seems reliable any longer. So I’m looking for a new way.

Books uses a SQLite database, IIRC stored in:
~/library/containers/com.apple.iBooksX/Data/Documents/BKLibrary
Copy the SQLite database elsewhere (preserving the original!) and poke (only!) at the copy with DB Browser for SQLite or some similar tool.
