How do you know how to identify if you’ve been blocked or deleted?

You don't. There is no indication on your device if you have been blocked by another person on their device. Any one can delete your Contact and you will have no way of knowing that either. Each user should expect privacy without their actions being broadcast to others. If they don't want to communicate with you, that is their choice.
