My iPhone and watch are both updated. My monthly challenge is to close activity rings 15 times this month. According to my monthly summary I have closed them 14 times so far this month yet the monthly challenge has me at 11 times.

Force restarting your iPhone and Apple Watch will update the number again, or you can close your ring one more time, to get the final count.
Happened to me as well a couple of challenges ago, but the fitness app corrected itself after the restart.
