Go to Settings/Accessibility/Touch/Back Tap.You probably have double or triple tap set to Flashlight.

Yes, Lawrence is correct if you are tapping the back of your phone and it is indeed called Back Tap. Back tap was introduced with iOS 14, so anyone whose iPhone is on iOS 14, iOS 15 or iOS 16 has this feature.
