Airpod 4 with Noise Cancellation - did I buy the wrong product?

My old AirPods 2 died when I dropped them in water :( I just bought the 4 with noise cancellation but I can't see how to get the same functionality.

My main use is listening to podcasts and music from my iPhone. With the old ones I could double tap on the right one to pause/unpause, and the left one to skip a track.

Looking in the settings for my new ones, there's "Press and hold airpods"left and right, where the only options are for noise control. And there are Call Control settings for answering phone calls.

Have they just removed that functionality form the 4s? Or is it because they have Noise Cancellation ; would the 4s without noise cancellation do what I want?

Thanks for anyone who knows and can help!
