Don't updates appear automatically because I've ticked off the box telling it to do so?

I'm in another country NA to EU and have never had a problem using iwatch or iPhone by using their SIM or adapters. So this is just an added complication background. However my watch goes black. Switch chargers/adapters however only have the only one magnetic backed for watch which is dedicated to it. I see a screen light up sometimes showing a red coil. What is that telling me?
