Apple's instructions indicate that you can remove yourself from a Family Sharing Group (unless you are under 13):

Leave Family Sharing - Apple Support

They also say you have to accept an invitation to join a group:

Add family members to a Family Sharing group on Mac - Apple Support

Add a member to a Family Sharing group on iPhone - Apple Support

Either way, if you are having difficulty leaving a Family Sharing group get in touch with Apple Support.
