After updating to macOS Sequoia, the Photos app's import layout might look different. Here’s how to access the import feature:

Additionally, Sequoia 15.1 released today so make sure to update that as well.
Do you want to import the photos from your iPhone to a folder location or directly into Apple's Photos? The Image Capture application will show the iPhone mounted in it provided there is a USB-C (or Lightning to USB-A or USB-fC) connection to the Mac; the phone is unlocked, and the Mac is confirmed as trusted on the phone. Then, you have a choice of a folder location, or Photos via the Image Capture Import To location selector.
The other advantage of using Image Capture is that images copied from the phone to a Finder location use the EXIF DateTimeOriginal date/time stamp for the image creation date, instead of the Finder asking the operating system to set the current System date/time stamp.
