All of a sudden it’s evident I’m missing some emojis. When I click to add an emoji there are blank spaces with a little gray circle. I’ve uninstalled the keyboard for emojis, restarted and just did the update to 18.1 and it’s still an issue.

I was having this same problem, brand new 16 pro with 18.1 installed.
After doing some reading about the update I realized they integrated a “Stickers” option into the emoji keyboard.
The gray circles are caused by this integration.
If you go into your settings app, you can turn off the “Stickers” option.
Setting > General > Keyboard
At the very bottom toggle the “Stickers” option off and the gray circles should be gone.

I had the same issue with my new 16 pro max. Upgrading to 18.2 fixed the issue for me. I think the problem was that my old phone had 18.2 with the new emojis so they showed up in my recently used, but since my new phone wasn’t on 18.2 yet, it showed blank spaces where the new emojis should have been.
I had a wonderful agent (Martell) and he walked me through (gave permission for him to look at my screen and use pointer to show me where to go) and was able to solve the problem (mostly).
I had to go into settings-keyboard and turn off stickers, that restored all of my most recent emojis.
I’m sure they’ll fix it completely with a new update. Hope this helped.
By no means am I a professional, I’m just relaying what worked for me.
Apple has an excellent customer service and best warranty by far, of any others I’ve had.

I’ve just noticed that the latest iOS update (18.2.1) solves this problem.
This is really annoying but if you just restart your iPhone it will be ok.
Apparently that doesn’t fix it for everybody because I’m on 18.2 and I have the same issue.
I’ve turned stickers on and off, I removed the emoji keyboard restarted the phone.. all the things. Nothing makes the stickers come back.
I don’t have the gray circles, but tons of emojis are just not there. You can search them but they wont show up otherwise. Theres a couple that i wanted to use and im not even sure what to put in the search bar to find them.
this is literally ALL the face emojis that are showing up…
