I am wanting to remove the 2TB SSD in my vintage 2017 MacBook Pro and install it into my 2020 MacMini M1, is that possible?

Not possible. Their architectures are completely different.
Most newer Apple Computers have Both the RAM and the Internal Drive Soldered to the Logicboard
This would make it impossible as already outlined by @John Galt
The 2018 MBP's storage is not removable. Nor for that matter is the Mac Mini's.
