Assigning a value to a word or letters in Numbers

I am preparing a scoring spreadsheet for tracking stocks. The last column provides the score for any row which is a listed stock. Is there a way to attribute a value to a word or a letter? In this case I will note that a year over year revenue is increasing which I denote as "Up" or "U" for which I would like to assign a value in the scoring column. How do I attribute a value for "Up" or "U" in the score column.
