Hi I’m selling my MacBook Air I think I’ve erased everything so if I switch it back on how do I know if it has

Make sure you've followed all the steps in this support article:

Once you have, when you restart the Mac it will come up to the Setup Assistant. At that point you're done and can just shut down the Mac.

If you see the "hello" screen with the steps to reconfigure macOS it is completely erased
