Hey guys,
I have an apple watch series 6 with watchOS 10.3.1 and I want to update to 10.6.1.
When I go to software update on the watch it says Unable to Check for Update.
When I go to Watch on my iPhone 13 Pro iOS 17.7.1, it says Update your iPhone first, which is up to date. I have the option to upgrade to iOS 18, but I don't want to.
How should I update my watch?

I’ve been a system designer and programmer for over 50 years. EVERYTHING in your post is total hogwash.
What iPhone do you have? All the updates slow down a bit the CPU to make you buy new devices, that's why I didn't want to update to the new OS. Have you noticed any slow downs?

what's you iOS version? 18?
I speak from experience. They do throttle.
Can't update apple watch series 6 from 10.3.1 to 10.6.1
