Reset Apple Watch won't update because update keeps pausing 2mins before end of update

I had to reset my Apple Watch, it is an SE which was bought last year. I haven't worn it in a while so decided to have a fresh start with it and erased all data. Apple Watch and phone will pair however when I try to update I will leave my phone and watch next to each other, not using any apps on phone and it will update until "2 minutes remaining" then say I am no longer in connection with my WIFI when I haven't moved the phone or Apple Watch. The watch won't let me into it unless I do the update on my phone, my phone won't let me get into the watch app without the update. Iphone is at most recent update. I have tried multiple things I have seen on forums etc however nothing has worked yet.
