If a provider gives me a ticket that has a qrcode, or if I can obtain that online, shouldn't I be able to manually to go Apple Wallet and (+) add it there via scanning? Not every vendor will provide an Add To Apple Wallet link.
Is this an oversight or is there a good reason that we cannot presently do this.

No, the tickets are now controlled by the issuer for safety and security reasons. Tickets are added via issuer app or website.
