New Mac and lots of changes... I now have a row of icons at the right-hand end of the dock, each one representing a running app and my regular app icons get shunted to the left. I don't want to see these running app icons at all. Is there a to stop them from appearing?

I don't think so (but I'm happy to be corrected). The extra icons on the right represent (as you said) currently running applications, so the only way to remove them is by quitting the applications.
The icons on the left are locked to the dock, meaning they remain visible regardless of whether the application is open or closed.

Disable "Show suggested and recent apps in Dock" in System Settings > Desktop & Dock > Dock.
I just realized what you were asking. If you open an app that is not in the Dock its icon will open in the Dock. It's been the case since at least as early as macOS Monterey. Probably before.
FWIW, all I can suggest is you make the Dock smaller so there is room for more icons. Or, remove any icons from the Dock you are not likely to use often.
Searching on the net it looks like there used to be an option in System Settings / Desktop and Dock to stop these icons appearing but it isn't there now! Why do Apple keep doing stuff like this?
Mm... I have that "switched off", ie the slider is to the left and showing grey.
