Unable to load java runtime environment

I'm trying to run Processing and when try to open the program the only thing I get is "unable to load java runtime environment". I've downloaded Version 8 Update 431 as it was the recommended but I keep getting the same window when I try to start Processing.

MacBook Air 13″, macOS 12.7
