Why is it, at the worst possible times Apple decides to update my contactless card on Apple Pay, happened a few times now between 8-9am (this is peak travel times). I’m stuck waiting either at a bus or train waiting the update to finish until contactless works for me to tap in.

Apple does not control the cards, passes, tickets etc. in the Wallet app. They are updated and controlled by the issuing authority (owner). If your transit pass was not available please discuss with the transit companies support team.
