Unable to create special characters using Spanish keyboard after iPadOS 18 update

Even having got rid of the useless combined keyboard idea that just didn’t work at all for me, if I select the Spanish keyboard I can no longer create special characters e.g. Accented ones. Holding the key down to access other characters doesn’t work in ChatGPT and typing things like ‘i no longer adds the accent. How can I just revert this back to the way it was, it is virtually useless to me at the moment.
