since iOS update my watch is not going to sleep mode, even though sleep focus is on. Screen now won’t dim and create simplified screen. What’s going on? This has only happened since new IOS update

Does the paired iPhone use the Sleep Focus?
Did you check the settings for Sleep in the WatchApp on your iPhone?
Did you try to force restart your watch by pressing and holding the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again?
If this does not work, unpairing the watch would be the next step:
