My iPhone control centre in the settings menu has no options that I can turn on or off such as screen recording, passwords, flashlight etc. it only has an “Access within apps” option. There is nothing else there.

You edit Control Centre within Control Centre, not Settings. Click the + sign in top left corner (yeah I know…a plus sign to remove things!). When you hit the + you can add, remove, resize and rearrange items.
Any reason why screen recording isn’t an option? It’s like it doesn’t exist on my phone. It’s a 14 Pro
