I just got the new iPhone 16 and for some reason the selfie camera on Instagram is so low resolution and has a gray over cast. I have tried contacting the developers. I have tried deleting the app and reinstalling it and nothing is fixing the issue. Please help

There's nothing anyone here can do to fix a problem with the Instagram app. If selfies taken with other apps are clear, then this is a problem that Instagram's developers need to fix. Your only workaround will be to take the selfie with another app and then upload it to Insta.
If you're seeing similar problems with other apps, though, post back and someone may be able to offer suggestions.

If the photo is clear and correct in your iPhone, then it is not a problem with your iPhone, at least not in the sense that your iPhone is in any way defective. Instagram (and probably TikTok) tries to "optimize" uploaded photos to make them, as they apparently claim, more "appealing". This can result in all sorts of changes that you don't like. TikTok may have similar automatic changes.

Yea even when I upload it to instagram it changes the color grade and quality. And it’s not just instagram its TikTok as well which makes me believe it’s an apple problem.

You can believe what you'd like to believe, but your belief if not correct. Apple doesn't own Instagran or TikTok and has no control over what they do with a photo you upload to their apps. None, whatsoever.
