When I get an incoming phonecall, my smartwatch automaticly opens the call, even of I don’t notice the call. Thus the caller is ‘braking in’ whatever I am doing, even a life conversation. How can I end this?

Open the WatchApp on your iPhone, go to Accessibility, then check if the option to answer calls automatically is enabled.
This can also be done on the Apple Watch in Settings/Accessibility
