How do you ALWAYS show history, when you launch the Calculator app? In the previous version of MacOS, the Calculator's Paper Tape was always shown on launch. I have to keep going to Show History to see it every time I open the app. Very annoying.

FWIW, if you decide not to use a third-party calculator, pressing control+command+s will open the history pane so you don't have to go to the View menu.
It doesn't appear you can. FWIW, many people have turned to PCalc in the App Store.
Have performed the actions in below image.
Left it in that exact state
Shutdown the Application and paused 5 seconds
Re-Launched the application
The exact same what is showing in that image is still there
To test further and repeated this exact same action a 3rd time

One can go back 30 Days as being history ?
Yes, one would have to click on a specific calculation on left panel and see the exact calculation on right panel
At least that is my interpretation of history
FWIW, your screen shot does not "Show History"
The Show History pane, not the last calculated value.
So if you quit the app and relaunch it, does the History pane appear?
Check again as we were posting at the same time

And Yes, after application is closed and opened again, the History is there in my setup

It certainly doesn't with any of my Macs running Sequoia.
If you open the history pane, quit Calculator, when you open it again the history pane will be closed.
