I was persuaded by a friend to get an iPhone, so far I’m regretting it. I would love to be able to configure things how I want them. How can I move photos into an album so they no longer show in the rather awful view of everything?

How about select the pictures; choose more (...), then Add to Album ? They don't move, the copy.
I would suggest that when you ask for help, you shouldn't start with "I’m regretting it." We are not Apple; we are just users like you. Some of us hang around here from time to time in case our experience may help someone. We don't get paid and we don't have a schedule, and on this site we only answer the questions we want to. Remember that the person who reads your post probably is in no way connected with the cause of your rant.
