Unable to edit misspelled words on iPhone

I find it incredibly difficult to edit misspelled words. Apple dictation is terrible, Apple is obviously created by people so far disconnected from nature that it is not surprising that any terms associated with nature such as plant names and location names cannot be dictated. I'd be surprised if any of them actually ever stepped outside. Misspelling includes ALL plant binomials and most plant and animal common names. What a shame! But what's worse, is that if a word is misspelled, whenever you click on it to try to edit the spelling, then the UI just force selects the entire word and one has to wage battle with the phone to try to edit the word. It's a horrible user experience, I much preferred Android for this. Is there a setting that I am missing? Is there a way to make Apple stop selecting words that it is obviously incapable of correcting given how extremely disconnected from nature most Apple employees are?
