Preview refuses to open since updating Mac to Sequoia 15.1.1

Kinda what the title is. I had some preview items open when my MacBook Pro (13-inch 2018) restarted to install Sequoia 15.1.1. Once the update was finished I attempted to open the pdfs again to look through them, but all I get is "Application Not Responding" and a report giving the details (which, unfortunately, I will need help deciphering). I have attached the report as additional text to this post (copy-pasted, hope that it's readable!)

I've attempted a few fixes e.g., restarting my mac, shutting down and rebooting in safe mode and attempting to quit the process in activity monitor. Restarting & rebooting in safe mode hasn't changed anything, and attempting to quit the process in AM feels a bit useless seeing as by the time the process pops up, it disappears again and I'm once again shown a report. I've seen other posts about deleting particular folders from my library related to preview (see fix #5 here), but I'll be honest I'm a tad nervous doing this, mostly in regards to finding the correct folders/files I should be deleting.

Any help/advice would be greatly appreciated.

Well, unfortunately, I let my MacBook run out of charge & and shut down, and now that it's rebooted again preview is once more failing to open. It's not even generating a report now, only trying to open and then quitting without notifying (when right clicking it, it says that the application is not responding).

Any help/advice would be greatly appreciated. Thanks.
