So, I deleted the printer from the printers list, intending to add it again. Alas, it is nowhere to be found. Resetting the MacOS printing system did not help. Power cycling again didn't either.

Yes that is true. My Epson ET-2750 can AirPrint with several desktop Mac's, a MacBook Pro, a couple of iPhones and iPad's.

I never used the Epson Smart Utility.

I connected the Eco-Tank to my local Wi-Fi network using the on screen setup menu on the printer.

Then I added the printer to my Mac's, see "Add a Wi-Fi Printer" at > Add a printer on Mac - Apple Support

Never had a problem printing from any devices on my network or scanning from the Mac's using Image Capture.
