After updating to MacOS Sequoia, my 2020 intel MacBook Air i5 has been restarting itself, while sleeping, due to kernel panics. EtreCheckPro has revealed that it also has a below average performance. What could be the causes of those two issues?

Uninstall everything listed under kernel extensions using the developer’s uninstaller, then test. You can do them one-at-a-time.
If you can determine which one is causing it, leave it uninstalled.

There are a large number of system modifications running in the background.
You'll have to figure out what system modifications you really need, removing the rest and checking performance.
