What are the steps to change the region for child account?

We moved countries from the US to Hong Kong. I have an iTunes account in both the US and Hong Kong. Our children, however, are family members under my US iTunes account. How best can I transfer the child accounts to either (a) new HK accounts for them and then add those to a Family Plan under my HK account? Or alternatively (b) first Change the “Region” for their US accounts, and then add them to my HK Family plan using the same Apple ID?

Would really appreciate a steer on this. Thank you!

If the children are under 13 years of age and their are Apple IDs reflect this, you will need to first transfer them to the Hong Kong account's Family sharing group.

Once that is done, you will need to go into each child's account on their devices and change the region to Hong Kong in Settings ➜ Apple ID ➜ Media & Purchases ➜ View Account ➜ Country/Region.
