Hey, I could not update my iWatch SE second generation currently phone, which is iPhone 11, please assist with this

Any error messages given?

Is your iPhone and Apple Watch connected to the charger during the update?

Both devices are using the same Wi-Fi network?

You can also upgrade the watch without the iPhone:
